Air Fried Gluten Free Trinidadian Aloo Pie

A beloved Trini favorite, reimagined for our gluten-free friends and prepared in a slightly healthier way through air frying. Inspiration for this recipe was taken from a non-gluten free recipe found on TheReceipeWebsite.

Ingredients

Aloo

  • 1 tsp cumin add extra to your liking after tasting
  • 1 tsp ginger
  • 2 tsp garlic
  • 3-4 whole medium potatoes (cubed and boiled)
  • 1/2 tsp white pepper
  • 1/2 tsp smoked paprika regular paprika works too, but smoked gives better flavor
  • 1 tsp salt add extra based on taste

Dough

  • 2 cup gluten free flour (Bob Mills (Blue Bag)) plus extra for dough
  • 1 cup tapioca flour (Bob Mills)
  • 1/4 cup sugar
  • 1 tsp salt
  • 1 tbsp baking powder
  • 1-1/4 cup greek yogurt full cream
  • 1/4 cup milk any milk, we use almond
  • 3 tsp xanthum gum skip if gf flour already has a binder/thickening agent
  • 1 tbsp ghee plus extra ghee for brushing aloo pies

Instructions

Aloo

  • Add boiled potato cubes, along with all Aloo ingredients into a large bowl and mashed well. Add salt, pepper, cumin and paprika to taste.

Dough

  • Combine the dry ingredients in a large bowl. Mix well.
  • Add yogurt and milk to the flour mixture by making a whole in the center of the flour mixture. Using a spatula, fold flour mixture into the yogurt and milk. Continue until ingredients are combined forming a ball. Add extra milk or tapioca flour (don't use GF flour, only use tapioca to help firm up the dough) until a dough ball is formed. (I recommend using the spatula until the ball is dry enough to handle to make the ball). Dough should dry on the outside and the inside so that it can be rolled out.
  • Divide dough into 6-8 balls depending on the size of the aloo pies you desire.
  • On a clean flat surface, generously add tapioca flour to the surface, then using a rolling pink, roll out each ball until flat. If the dough begins to stick, sprinkle tapioca flour and continue rolling flat.
  • Fill the flat dough with 1-2 heaping spoons of Aloo. Fold dough over to form pies. Shapes may vary but it is important to seal the dough closed. Dip your fingers in water and pinch dough to help seal openings.
  • Once all pies are filled are ready to cook, brush the tops of the aloo pies with melted ghee.
  • Air fry at 320 degrees for 10-15 mins or until golden brown.
  • Turn pies over and brush with melted ghee.
  • Return to the air fryer for an additional 5-10 mins or until golden brown.
